If I were starting from a place of perfect ignorance of breakfast foods and tasked with naming them all like Adam and the animals, the Dutch Baby Pancake is probably what I would give the name “pancake” to. I mean, if someone told you, “Here’s a pan, make a cake,” you would mix up some batter, pour it into the pan, and stick it into the oven, right? And that simple fact right there, demonstrates why the Dutch baby pancake is such a fabulous breakfast. Because it really is a sort of cake. Or something between a cake and an English pudding. That you eat for breakfast. And it’s hot. And delicious. As it stands, though, I haven’t been given the duty of naming breakfast foods and that’s probably for the best because I imagine it’s thankless work and no matter what I came up with, people would rip on me nonstop on the internet. “why did u naem it bacon lol? u don’t bake it lololol.” [Read more…]
pear pancakes with vanilla and lime
The season has changed in the city. The sky has turned that unmistakable clear September blue, and the trees are edging toward yellow, with bunches of leaves giving up altogether and falling from trees still green. The sounds of fall are here too–the brisk wind and the last frenzied twittering of the birds. I can hear both right now through open back door. Though almost dead, my yellowed tomato plants out on our 3rd-floor roof deck have started sending brand new shoots into the sky (a tribute I guess to the cooler daytime temperatures). And yesterday, we got our second shipment of jewel-toned pears in the CSA share, signaling that fall really is here. [Read more…]
buckwheat pancakes with brown sugar and bacon
Bacon and buckwheat were an unlikely combination, but we were out of butter, and had some bacon, not to mention a few tablespoons of bacon grease I’d saved. Brian was the first to get behind the idea, and with just a little convincing I decided to give it a try. Turns out bacon and buckwheat should have teamed up long ago. The pancakes were surprisingly supple, light, balanced, and divinely sweet and savory–officially my new favorite breakfast. [Read more…]
