I decided to take my own advice last night, and even made fresh chips. Homemade chips (I just fried them, didn’t make the actual tortillas) are way better than their store bought counterparts. They were as delicate as you could expect a corn chip to be and not as crunchy. Commercials are always pushing the idea of big crunch, but I’m not into it.
Cut corn tortillas into sixths and toss them into some very hot neutral oil. Fry until they just start to turn golden at the edges, flipping halfway through. Drain on paper towels and toss with kosher salt and maybe a squeeze of lime.
