Our little family celebrations have provided much-needed distractions over the past months. As we head into the end of the year, I want to harness this same energy to make the holidays feel extra special – even if they’re pared down. I’ve been delighting in planning little things like gifts and menus and holiday treats, with a focus on the details that often fall by the wayside in the season’s usual frantic pace.
There’s no question things will be different this year, but I’m looking forward to a few festive, if small, gatherings within my pod. I’m going all in with plenty of candles, my favorite records, and of course, lots of little bites and thoughtful sweets.
While I’m creating my holiday menu with more thought and extra attention, I don’t want to spend all my time in the kitchen. This year, I’ll be cooking smart recipes that I know will work, along with easy shortcuts, and favorite staples like Président Brie. Président brie is a familiar favorite from my travels in France and a beloved staple of my best cheese plates. Traditionally crafted, made from 100 percent cow’s milk, and with a beautifully mild flavor, Président brie always has a place in my holiday spread. Président Brie is also a surprisingly versatile ingredient for sweet and savory dishes. One creation I’m certain I’ll revisit are these little brie and roasted grape tarts. They’re as simple to make as cutting store-bought puff pastry into squares, adding a few slices of Président brie and a handful of grapes, and baking them up for about 20 minutes. Fresh thyme, black pepper, and a drizzle of honey make everything pop.
There’s lots of room for variation here. Président Brie melts beautifully into the puff pastry and makes a lovely base for sautéed mushrooms, sun-dried tomatoes, or sliced roasted red peppers. Experimentation and big flavors are welcome here.

- 2 sheets store-bought puff pastry, thawed
- 1 8- ounce wheel Président brie, sliced
- 2 cups seedless red and/or black grapes, rinsed and dried
- ¼ cup honey
- ½ teaspoon black pepper
- ¼ teaspoon sea salt
- 6 sprigs fresh thyme, plus more for garnish

Preheat oven to 400 degrees F. Line 2 large rimmed baking sheets with parchment.

Cut the puff pastry into 12 (4-inch) squares and arrange on baking sheets.

Arrange slices of brie evenly on the pastry squares, leaving a ½-inch border. Tuck the grapes (about 6 - 8 per tart) into and around the cheese. Drizzle tarts all over with honey. Sprinkle thyme, black pepper, and sea salt.

Bake tarts 15 - 20 minutes, or until cheese is bubbling and the pastry is golden and puffed.

Cool 10 minutes, garnish with fresh thyme and a few twists of black pepper, and serve. Tarts are best right out of the oven.
