Let’s make it official, shall we fall? We’re kicking off the beginning of jacket season with a roasted everything salad featuring garden carrots, plus CSA chard, beets, and garlic.

I’m currently vegetarian moving slowly to vegan and stumbled on this recipe while searching for meal ideas. I loooooooove beets so this was definitely something I needed to make!
This is EVERYTHING! I made it last night and was just in heaven! The roasted vegetables taste great individually but the combination of everything together was just sensational!
